Instructions for Farmhouse Sour Cherry Crisp

Preheat the oven to 375°F (190°C). Lightly butter a 9-inch baking dish.

In a large bowl, toss the pitted sour cherries with cane sugar, cornstarch, vanilla extract, lemon zest, and a pinch of salt until evenly coated. Spread the mixture into the prepared baking dish.

In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.

Scatter the oat topping evenly over the cherries. Bake for 35–40 minutes, until the top is golden and the filling bubbles around the edges.
