Red Currant Glaze Recipe
This simple Red Currant Glaze adds a burst of flavor to your favorite desserts and pastries. It’s easy to make and perfect for adding a touch of elegance to any dish.
Ingredients:
- Pork loin, lamb, venison, duck, turkey, or glazed roasted carrots
- 1 cup red currants (fresh or frozen)
- ¼ cup water
- 2 tablespoons red wine vinegar (or apple cider vinegar)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- Optional: fresh thyme
Instructions:
- In a small saucepan, combine red currants and water. Simmer over medium heat for 5–7 minutes until the berries burst and break down.
- Use the back of a spoon or a potato masher to smash the softened currants directly in the pan. If you prefer a smoother glaze, you can also puree the mixture using an immersion blender or small food processor.
- Return the mixture to the saucepan. Add vinegar, honey, mustard, salt, and any optional seasonings.
- Simmer over low heat for 5–10 minutes, stirring occasionally, until slightly thickened.
- Prepare your meat of choice (pork, duck, venison, or poultry) appropriately. Brush with a thin layer of the red currant glaze before roasting.
- During the final 10–15 minutes of cooking, baste with additional glaze to create a glossy, flavorful finish.
- Serve any remaining glaze warm on the side.
