It’s made by reducing juneberries with vinegar, aromatics, and just enough sugar to balance the fruit’s natural tartness. The result? A farm-to-fork glaze that turns even simple ingredients into something gourmet.

Fun fact: Juneberries are rich in iron, calcium, and antioxidants like anthocyanins. They contain twice the fiber of blueberries and a subtle almond undertone — making them perfect for elevated preserves and savory condiments.

Savory Juneberry Gastrique: Tart, Herbed & Elegant

🍽️ Ingredients for Savory Juneberry Gastrique

  • 2 cups juneberries (fresh or frozen)
  • ½ cup sugar or maple syrup (adjust to taste)
  • cup red wine vinegar (or balsamic for deeper flavor)
  • ½ cup water
  • 1 sprig fresh thyme (or ½ tsp dried)
  • Optional: 1 strip orange peel or ½ tsp cracked black pepper

🥣 Instructions for Savory Juneberry Gastrique

  1. In a saucepan, combine juneberries, sugar, vinegar, water, and herbs.
  2. Bring to a simmer over medium heat, stirring occasionally.
  3. Simmer for 15–20 minutes, mashing the berries gently as they soften.
  4. Once mixture thickens slightly, strain through a fine mesh sieve, pressing to extract liquid.
  5. Return strained liquid to the pot and simmer another 5–8 minutes to reduce into a syrupy consistency.
  6. Let cool slightly, then pour into a clean jar. Store in fridge for up to 2 weeks.
