Few desserts walk the line between rustic and refined as well as these Juneberry Crumble Bars. With their buttery crust, jewel-toned filling, and golden crumb topping, they’re everything a bar dessert should be — sweet, tangy, soft, and just a little crisp on top.
Did you know? Juneberries (Amelanchier alnifolia, also called saskatoons or serviceberries) are native to North America and offer a flavor that combines blueberry, almond, and a hint of cherry. They’re also one of the most nutrient-dense berries you can grow — packed with fiber, protein, manganese, and iron.

Juneberry Crumble Bars
🍽️ Ingredients for Juneberry Crumble Bars
Crust + Crumble (one dough, split):
- 1½ cups all-purpose flour
- 1½ cups old-fashioned oats
- ¾ cup brown sugar (lightly packed)
- ½ tsp cinnamon
- ¼ tsp salt
- ¾ cup unsalted butter, melted
- 1 tsp vanilla extract
Filling:
- 2½ cups fresh or frozen juneberries
- ⅓ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- Optional: ½ tsp almond extract or zest of one lemon
🥣 Instructions for Juneberry Crumble Bars
- Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
- In a large bowl, mix flour, oats, brown sugar, cinnamon, and salt. Stir in melted butter and vanilla until crumbly.
- Press ⅔ of the dough into the bottom of the prepared pan and bake for 10 minutes.
- While crust bakes, prepare the filling: In a saucepan, combine juneberries, sugar, lemon juice, and cornstarch. Simmer for 5–8 minutes until berries begin to break down and mixture thickens.
- Spread the filling over the warm crust.
- Sprinkle remaining crumble mixture over the top.
- Bake an additional 25–30 minutes, or until golden and bubbling.
- Let cool completely before slicing.
