Honeyberry Muffins
🍽️ Ingredients for Honeyberry Muffins
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ½ cup milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen honeyberries
🥣 Instructions for Honeyberry Muffins
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg, then add the milk, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the honeyberries.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

- Frozen honeyberries can be used if fresh ones aren’t available. Do not thaw them before adding to the batter to prevent excess bleeding.
- Add a streusel topping for extra texture: mix ¼ cup flour, 2 tablespoons brown sugar, and 2 tablespoons butter until crumbly, then sprinkle over the muffins before baking.
